I’d like to introduce you to the least photogenic but most delicious healthy breakfast you’ll eat all Fall. Riiiiight up there. That’s the one!

These pumpkin chia overnight oats may not win any beauty contests, but they are my new favorite thing. Have you ever tried overnight oats? They are a recent Pinterest phenomenon, basically consisting of old-fashioned oats that sit in liquid overnight to soften and form a cold, sweet, healthy breakfast porridge. I have been very intrigued by them ever since I tried chia pudding last year – this peanut butter and jelly version remains one of the most popular recipes on my site! I love oatmeal and eat it almost every morning because I am a boring grandma, but I wasn’t sure how COLD oats would turn out…I mean, the idea of cold, gloppy oatmeal is not exactly appetizing, right?

Guys, I played it so cool this year. I patiently waited all the way until OCTOBER to post a pumpkin recipe.

Not going to lie – this would not have been possible if it wasn’t for San Francisco’s Indian summers. The daily 75-and-sunny forecast hasn’t really made me want to cozy up with chili and Oktoberfest beers and pumpkin everything as much as I usually do. But I’m craving Fall in a big way, so although the weather might not be cooperating, I’ve been determined to make it feel like Fall in our house ever since the calendar crept over into October. And what better way to do that than with dark chocolate chip pumpkin pancakes?

German-Style Beer Brats

At this time last year, we were dressed up in our dirndls and leiderhosen, drinking liters and liters of beer and chowing down on bratwursts, spaetzle, schnitzel, and strudel. It was the absolute best.

This year, I’m on my couch in our little apartment-cave, getting slightly drunk by myself in the middle of the day because I am drinking the gigantic beer I used as a prop in these photos. I think this would be considered a significant downgrade. At least there’s still beer?

Bourbon Honey Fig No-Churn Ice Cream

So the day I made this, I was all set to bust out the apples, the cinnamon, the nutmeg, the streusel topping. I was so excited for my first Fall baking extravaganza. I mean, pumpkin is basically my favorite thing in the world. Fall is totally my happy baking place.

But then…it was 95 degrees. And our apartment has no A/C. And I just COULD NOT bring myself to turn on the oven. I tried and tried to put myself in the blustery Fall mindset, and I just couldn’t. I’m sorry, guys. I promise streusel-topped butter-laden apple-y pumpkin-y things are coming soon, but just not today. Besides, it’s the official last day of summer! 

Can I offer you some bourbon honey fig no-churn ice cream instead?
