Guys, today we need to talk about something really important.

Something called…mango bacon guacamole.

Last week, we talked about how important great snacks are to summer fun (um, absolutely critical, obviously).  I think the ultimate summer snack has to be chips and guac. Maybe it’s the California girl in me, but I seriously need to be restrained around any form of guacamole. I will eat the whole bowl and go looking for more. I wish I was exaggerating, but I’m totally not. I know my fellow guacamole devotees understand.

Last summer, I waxed poetic about my all-time favorite kind of salad: panzanella. I mean, it’s a bread salad. What’s not to absolutely love? I made this salad a million times last summer and I don’t see this summer being any different. But while I’m waiting for those perfectly plump tomatoes to hit the farmers market, I decided to whip up a spring version that I have to say I – gasp! – might like better than the original.

I think the giant hunks of thick-cut bacon and the bread toasted up in bacon fat might have something to do with it. Maybe.

I have a life lesson for you that I personally think is best learned as early in life as possible.

If you want to host a brunch and look super fancy and put together and Martha Stewart-y…make a frittata. I mean, just the word sounds fancy! It’s everything you want in a brunch dish – eggs and cheese and delicious fresh veggie things (and bacon, of course). Only you have to know that it’s really just a quiche without the work, a quick sauté and a whisk and a few minutes in the oven. Really, it’s the easiest thing in the entire world. Add a fruit salad and some mimosas and sit back and let the compliments come in!

Guys. I finally did it. 

I put bacon in a baked good and it’s exactly as so-wrong-it’s-right as I wanted it to be.

Bacon in baked goods has been a little food trend for a while now, but I’ve always been skeptical. I obviously love bacon in just about everything, but I just feel that there is a time and a place for bacon baked goods. I didn’t want to just add bacon to my brownies just BECAUSE. I wanted to find something sweet that the bacon flavor would really complement, a baked good that was just screaming for some smoky MEAT, ya know?
