Pumpkin Chia Overnight Oats

pumpkin chia overnight oats // my bacon-wrapped life

I’d like to introduce you to the least photogenic but most delicious healthy breakfast you’ll eat all Fall. Riiiiight up there. That’s the one!

These pumpkin chia overnight oats may not win any beauty contests, but they are my new favorite thing. Have you ever tried overnight oats? They are a recent Pinterest phenomenon, basically consisting of old-fashioned oats that sit in liquid overnight to soften and form a cold, sweet, healthy breakfast porridge. I have been very intrigued by them ever since I tried chia pudding last year – this peanut butter and jelly version remains one of the most popular recipes on my site! I love oatmeal and eat it almost every morning because I am a boring grandma, but I wasn’t sure how COLD oats would turn out…I mean, the idea of cold, gloppy oatmeal is not exactly appetizing, right?

grilled peach and stovetop pistachio granola breakfast bowls // my bacon-wrapped life

I can just feel the days of fresh peaches lining the grocery store rows slipping away, and I’m holding on with all my might. Don’t leave me, little guys!! (I swear I’m 25, not 75, as that prior paragraph might lead you to believe. I really don’t know what to say re: my massive uncool-ness. I’m sorry?)

Cheesy Jalapeño Bacon Corn Cakes

cheesy jalapeño bacon corn cakes // my bacon-wrapped lifeSweet or savory? It’s been the fundamental brunch dilemma since the beginning of brunching time. It’s a critical decision that can make or break your meal, and let’s be real—if you’re like me and take your brunch really, really seriously–sometimes your entire day.

Here’s the thing: in my opinion, I don’t think most brunch places really do us any favors here. In general, the brunch options are lots of really awesome-sounding sweet things and also lots of really delicious-sounding savory things, but then an utter laziness when it comes to those who want a little of both. Options are boring and unimaginative, “combo plates” that consist of 2 plain pancakes and 2 plain scrambled eggs with 2 plain links of bacon or sausage. Bo-ring! Why can no one offer me half of a sausage and breakfast potato scramble and half an order of banana walnut French toast? Apparently, sweet and savory creativity is too much to ask.
