Peanut Butter, Banana, and Honey Steel-Cut Oats

So…this is basically a super-fancy version of the breakfast I eat every single morning in the winter.

My go-to weekday morning routine: microwave a packet of instant oats. Stir in a spoonful of peanut butter or sunbutter. Top with banana slices. BOOM. It’s been my winter breakfast routine since high school, because it’s so easy, cozy, healthy, and filling. And for Monday through Friday, it’s great. But the weekend calls for something a little more special, something that might take a little more than 2 minutes and 30 seconds to make, but rewards you with much more flavor and satisfaction. So this weekend, when I was craving something special but still wanting to keep things at least relatively healthy, I decided to dial my average oatmeal breakfast up a notch with slow-cooked steel cut oats, a lightly sweet touch of honey, and a sprinkle of chia seeds. And I must admit, these peanut butter, banana, and honey steel-cut oats can barely be considered in the same food group as my regular quickie oatmeal breakfast.

Coconut Oil Banana Bread

Do you ever see a recipe (in a cookbook, online, on a menu, wherever) and you just absolutely have to drop everything and make it RIGHT THEN?

This is a result of one of those moments.

OK fine, I saw this beauty a few weeks ago, but this was the very first opportunity I had to bake something, so for me, that’s a pretty darn quick turn-around. As a food blogger, I have a looooong list of recipe ideas and a significant backlog of things I want to make. But I wasn’t feeling inspired for my post this week until I started thinking about exactly what I really wanted to eat. I was craving something cozy and sweet but not overly indulgent, something that I wouldn’t feel terrible about eating (especially before the pending Thanksgiving onslaught) but also would satisfy me and make me feel warm and fuzzy inside the way really only a fantastic baked treat can. I wanted this coconut oil banana bread and, backlog be damned, I was going to make it!

Pumpkin Chia Overnight Oats

I’d like to introduce you to the least photogenic but most delicious healthy breakfast you’ll eat all Fall. Riiiiight up there. That’s the one!

These pumpkin chia overnight oats may not win any beauty contests, but they are my new favorite thing. Have you ever tried overnight oats? They are a recent Pinterest phenomenon, basically consisting of old-fashioned oats that sit in liquid overnight to soften and form a cold, sweet, healthy breakfast porridge. I have been very intrigued by them ever since I tried chia pudding last year – this peanut butter and jelly version remains one of the most popular recipes on my site! I love oatmeal and eat it almost every morning because I am a boring grandma, but I wasn’t sure how COLD oats would turn out…I mean, the idea of cold, gloppy oatmeal is not exactly appetizing, right?

I can just feel the days of fresh peaches lining the grocery store rows slipping away, and I’m holding on with all my might. Don’t leave me, little guys!! But try as I may, they’re going, and I know this just might be my last awesome-peach hurrah of the summer. I’m trying to be cool about it. (Cue dramatic sobbing.)
