Happy Memorial Day weekend! I know we tend to associate this 3 day weekend with the start of summer produce, but bear with me – it’s still technically spring for a few more weeks! Apparently something about seeing all the green vegetables pop up at the market this time of year makes me want to throw them on carbs with prosciutto, which I think is generally a good strategy for pretty much anything, right?

Banana bread might be the first thing I bake in a new kitchen to feel like home, but shortly after has to be homemade pizza. It’s the savory equivalent, coziness-wise, and nothing makes me feel quite at home like a bowl of dough rising in the corner, a floured counter, and visions of crispy, cheesy, meaty goodness dancing through my head.

Most of the time, nothing much comes out of it since I have an incredible ability to fall asleep within 30 seconds flat, but one night, my brain was really going, because I was thinking about something super important: how I could get more runny egg pizza in my life.

Butternut Squash and Bacon Pizza | My Bacon-Wrapped Life

This is my absolute perfect winter pizza.

And by that I mean it’s my perfect how-is-it-still-zero-degrees-on-March-2nd pizza.

I can’t look ahead to asparagus and artichokes and other signs of spring. I can’t think about bathing suits or sunshine or Vitamin D. It’s just too painful. Let’s just hang out here, in our PJs in the middle of the day (because obviously we haven’t been outside yet), gazing out of our snow-filled windows and eating butternut squash and bacon pizza. This is my happy place right now.
