It’s been way too long since we bacon-ed our dessert, amiright?

In fact, I know it’s been just about a year, because it just happens to be my 4 year blogiversary! Just about 4 years ago, I started posting on this here space (check out my first post if you want to see some seriously offensive photos). Since then, it’s become a little tradition to create a bacon dessert to celebrate. Because why just eat butter and sugar when we can eat butter, sugar, AND bacon?!

Peanut Butter, Banana, and Honey Steel-Cut Oats

So…this is basically a super-fancy version of the breakfast I eat every single morning in the winter.

My go-to weekday morning routine: microwave a packet of instant oats. Stir in a spoonful of peanut butter or sunbutter. Top with banana slices. BOOM. It’s been my winter breakfast routine since high school, because it’s so easy, cozy, healthy, and filling. And for Monday through Friday, it’s great. But the weekend calls for something a little more special, something that might take a little more than 2 minutes and 30 seconds to make, but rewards you with much more flavor and satisfaction. So this weekend, when I was craving something special but still wanting to keep things at least relatively healthy, I decided to dial my average oatmeal breakfast up a notch with slow-cooked steel cut oats, a lightly sweet touch of honey, and a sprinkle of chia seeds. And I must admit, these peanut butter, banana, and honey steel-cut oats can barely be considered in the same food group as my regular quickie oatmeal breakfast.

Foodie Favorites – January 15, 2015

Sometimes, I cook a bunch of bacon, then cook bread cubes in the leftover bacon grease, then cook brussels sprouts in more bacon grease, then call it dinner. Oops?

Hey guys! How’s your week going? After basically hibernating for the first week of January due to insanely freezing temps, I’ve resumed my usual levels of walking around and it feels surprisingly great! It’s a balmy 15°F after all – totally do-able, right? (Can you even believe I was born in Los Angeles?) Hope you’re keeping warm and braving the winter wherever you are. Here are this week’s Foodie Favorites!

I want to eat this entire pan of oatmeal cookie baked oatmeal. I love baked oatmeal, and this version looks so homey, comforting, and flavorful!

These spaghetti Bolognese garlic bread boats are basically the only thing I want to eat until it gets warm out again. Obviously the only way to make carbs better is adding more carbs. It’s science!

Happy spring, everyone!!!

Just kidding. It’s 25 degrees out today with a snowstorm coming this week. Spring has NOT SPRUNG in Chicago.

I had planned to do a light, fresh, healthy recipe today to celebrate the official start of spring. But then I was like, you know what, screw it, I’m making some super-loaded banana muffins all jacked up with dark chocolate and toasted pecans. Because in this cruel hell in which it’s still sub-freezing and snowing in late March, bathing suit season just seems really, really far away. And banana muffins sound really, really good right now.
