Hellooooo first football Sunday of the year!!

This is the kind of thing where, if I had my shit together, I would have posted this nacho beauty last weekend so you could make it for the first football Sunday of the year. But since last weekend I was busy wedding dress shopping (!!!) and making cookies, I hope you’ll forgive me. Besides, we have an entire glorious five months of football Sundays to look forward to, so I think we’re still cool.

Besides, eating an entire tray of BBQ chicken bacon nachos was not my least favorite way to spend the first football Sunday of the year. In fact, one might say it was THE BEST WAY EVER to spend the first football Sunday of the year. One might definitely say that.

Whole-Wheat Pizza with Summer Veggies

Like most little kids, one of my absolute favorite foods growing up was pizza. Eight-year-old Meg could GET DOWN with some Hawaiian Pizza Hut pan pizza anytime, anywhere. And also like most little kids, my tastes have changed as I’ve grown older – more wood-fired thin crust with fancy meats and cheeses than greasy shredded mozzarella on an even greasier crust. But when it comes down to it, I have truly yet to meet a pizza that I didn’t prefer to most other things. From hearty and heavy deep dish (I am a Chicagoan, after all) to cracker thin crust with a delicate spattering of toppings, I love them all and could easily eat pizza every day. So considering how much I love to cook and bake, it surprises even me that I’d never attempted my own pizza crust before.

Perfect Panzanella Salad

Guys, GUYS. I have a problem. I’m totally, completely, and helplessly addicted. To a SALAD.

What’s wrong with me?

Before you all start freaking out, taking my temperature, and generally worrying that I’ve lost my mind, let me clarify. Panzanella is a bread salad. (“Ohhh,” you say. “That explains it.”) You take hunks of fresh bread, fry ‘em up in a skillet with olive oil/butter/both (insert sheepish grin) and toss those babies with fresh veggies, some protein if you want, and homemade vinaigrette. It’s my new favorite summer meal, a perfect blank canvas with a whole world of possible combinations and customizations. Sometimes it is a struggle to make anything else for dinner, because I just. Want. Panzanella.
