And in a blink of an eye, it’s that time of year again. Guys, this week is my two-year blogiversary!

It feels like just yesterday we were celebrating one year of bacon and lovin’ with this salted caramel bacon ice cream pie. I mean seriously. How was that one year ago?!

So while I can’t believe it’s been two years that we’ve been hangin’ out in this here corner of the internet, I definitely knew we’d be in need of some major celebration. As you probably know by now, in my book, that usually takes the form of an ultra-decadent sweet-and-salty bacon dessert. Also, it’s Father’s Day! If meat in a dessert doesn’t scream “Dad’s day”, I don’t know what does. I know my super sweet-tooth (and bacon-tooth?) Dad would agree!

Salted Bourbon Dulce De Leche No-Churn Ice Cream

…Also known as the longest recipe title of all time. Also (and more importantly) known as the coolest ice-cream-without-an-ice-cream-maker trick EVER, and my new favorite thing.

I’ve been dying to try a no-churn ice cream for, I dunno, FOREVER. An ice cream maker is just one of those specialty appliances that doesn’t make the cut in my teeny-tiny kitchen. And I know a lot of you feel the same way. But that doesn’t mean we should be denied the incredibleness that is homemade ice cream in the summertime, right?! This is an issue I feel strongly impassioned about. Homemade ice cream for the people!

Are we ready for some real talk today? Some happy/sad/nervous/excited real-life real talk? I hope so, because I am basically in a glass case of emotion.

This right here is my last post as a Chicagoan. Brad and I are packin’ up and doing the whole move-across-the-country thing, because in just a few short weeks he’ll start grad school at UC Berkeley. While so many parts of me are incredibly thrilled and excited for this next chapter in our lives (and, uh, 75-degree winters), thinking about leaving the people I love, this city I call home in every sense of the word, and the wonderful life we have here makes me feel super squeamy inside. Technical term.

Bourbon Salted Caramel Fudge

I’m not going to lie to you. I almost wrote this recipe off as a total, ugh-inducing recipe fail.

See, these were supposed to be CARAMELS. Ooey-gooey, stick-to-your-teeth, smooth and glossy caramels. Nice and pretty and perfect for Valentine’s Day (because, you know, we do holidays very early in food blogger land). But apparently my candy thermometer was a bit off, because I pulled them off the heat too soon and ended up with fudge. Watching them set up, I could tell they weren’t right and I got super frustrated. But then…THEN….we tried them. And they were so absolutely amazing that I couldn’t NOT share them with you guys. Enter: bourbon salted caramel FUDGE!
