Today, we brunch. And pi(e). All at once!!

I wanted to make a delicious, decadent recipe for Easter brunch to share with you guys today, and couldn’t help but notice that tomorrow is the biggest nerd holiday of the year – pi day!! Since I am all about the two-for-one bang for your holiday buck (and am also a giant nerd), this “breakfast pie” (a.k.a. quiche) was just the ticket.

I know, I know, I just had a new favorite snack last week. But I have another one today. Can’t I have both? Who only eats one snack a day, anyways?

Anyways, while I am well aware that these peanut butter dark chocolate energy bites will not win any beauty contests, I need you to make them A-S-A-P if you’re into delicious, healthy, chocolate-y, peanut butter-y bites of wholesome and naturally-sweetened goodness. Or just chocolate and peanut butter. That’s cool, too.

The best, best thing about living in Chicago is that as soon as the weather shows even the slightest signs of heating up, people really freak out. The lakeshore path is filled with runners and bikers, restaurants bust out their outdoor patio furniture, and everywhere you look, people are drinking beer outside and laughing with their friends. The upside about the weather being absolute crap for much of the year is that people don’t waste a second of a sunny day, and there’s nothing like the energy in the city in the summer. It makes the rest of the year (almost) totally worth it.
