I’m baaaaaack! Four days later, I’m still recovering from the most incredible weekend filled with champagne, guacamole, and Jell-O shots (hey, I never said it would be classy, okay?). Needless to say, I’m in major detox mode this week! Not detox as in not-eating-food-and-drinking-only-juice (who do you think I am??) but more like detox as in filling-my-belly-with-things-that-are-happy-and-healthy. Just like these incredible kale pesto quinoa bowls!
Important life lesson: You can never have enough healthy hand-held snacks. Or, ya know, chocolate. You definitely can never have enough chocolate.
After absolutely loving the results of these homemade granola bars and these Copycat Clif bars, I turned my sights to another one of my favorite snacks – KIND bars! Dark chocolate cherry cashew KIND bars, to be exact. Can you tell I’m a crazy bar fiend? I love these bars in particular because they’re hand-held and convenient, but also made with real, healthy ingredients. Plus, did I mention chocolate? But whenever I love something so much, my food-blogger brain starts pondering if I could maybe, maybe make it at home. And maybe even make it more delicious, cheaper, and real-food-filled?
Before you say anything – I know. I know “oat bran muffins” is pretty much the least sexy food-name of all time. But hear me out!!
These blueberry oat bran muffins are kinda sorta like the nerdy girl in the 90’s rom-com who turns into a total babe and wins the heart of the most popular guy in school as soon as she gets some contacts and a blowout. Ya dig?
It’s like, oat bran, BO-RING. Bran muffins, MEH. But then! We add big juicy bursts of fresh blueberry deliciousness and….DAYUMMMM. Sexy. Right?
I’d like to formally introduce you to what will be henceforth be known as The Summer of Quick and Easy Recipes on My Bacon-Wrapped Life.
It’s not ideal, but it’s real life, people. With a crazy (at least, crazy for my super-homebody self) travel schedule that’s packed my summer with weddings and wedding-errands and lake vacations and friend visits, my summer is lookin’ a lotta wonderful but also a little nutso. Which means keeping up with this blog is going to be an adventure and a half for this working girl. So I just wanted to throw out some advance warning that this here space will tend more towards the quick and easy and less towards the slow-simmered Bolognese/homemade cinnamon rolls/fancy-pants stuff for the next few months. Which I think is actually quite perfect for the summer, ya know? Don’t we all really just want something fast and mindless and delicious and hot-kitchen-time minimizing?
That’s the summer dream, people.
