Classic, no frills Dreyer’s mint chocolate chip with a plastic spoon. Just the best!

Hi guys! How’s your week going? We’ve been having some seriously California winter-weather here – lots of rain and temps actually below 50 (gasp!!) so we haven’t been up to too much besides LOTS of couch time. Which sometimes is just the best, right?! Here are this week’s Foodie Favorites!

St. Patrick’s Day is coming up, and this slow cooker corned beef and cabbage looks like the perfect accompaniment to fudgy chocolate stout brownies!

These peanut butter and jelly fudge brownies look unbelievable. I just want to peanut-butter-and-jelly-fy everything.

This right here is my ideal single-gal-for-the-night meal.

Every woman in the world who lives with their man knows what I’m talking about. It’s what we eat when our boyfriends/fiancés/husbands are traveling for business or having a guy’s night. It’s pure, selfish “me” food, and as much as we love our men, it’s always something we secretly look forward to making and eating when we get the rare single-gal-night opportunity. For me, my top single-gal meals include a lot of things that Brad will gladly eat, but doesn’t really consider a real, filling (read: meat-filled) meal: avocado toast, veggie and egg scrambles, grain bowls, anything with tons of butternut squash and/or sweet potato, and anything with the word “drizzle”. I manage to check of 3 of these boxes in this meal, so I consider this basically the ULTIMATE Meg-meal. I went all out, ladies.

Serious brunch at the Original Pancake House in Chicago. I can never resist a good greasy skillet!

Happy Wednesday, people! How’s your week going? I had a very productive “single lady” weekend while Brad visited his friend Dave in Madison. I caught up with girlfriends, watched way too much Millionaire Matchmaker, and drank tons of wine – I couldn’t have asked for a better girly weekend! Of course, I was more than happy to greet Brad when he got home – a girl can only watch so much trashy TV before she starts to miss watching football a little teeny tiny bit (never tell him I admitted that). On to this week’s Foodie Favorites!

5 Minute Hummus

5-Minute Hummus | My Bacon-Wrapped Life

New Year’s Eve is tomorrow, and in honor of the pending holiday, I thought I’d make a quick, easy, and fabulous party dip. I’m not going to lie – I’m totally a stay-at-home New Year’s Eve-er. The idea of paying $150 for the “privilege” of spending the evening surrounded by sweaty, drunk people at a random bar (not to mention having to keep my heels on ALL NIGHT) is definitely not my idea of a good time.
