mango green smoothie bowls // my bacon-wrapped life

Hello from the other side (of moving)! I kept trying to find an hour or two to post these bowls of sunshine this weekend, but between packing, moving, unpacking, organizing, and watching the season premiere of Game of Thrones (priorities!!) that hour just never materialized. But I promise these mango green smoothie bowls are totally worth the wait!

Have you tried this new smoothie bowl trend? At first I was skeptical, but once I tried it I was totally hooked. The key is to make your smoothie a little thicker than you normally would if you were to just drink it the regular way so it doesn’t feel like you’re spooning up liquid. For these mango green smoothie bowls, I took my favorite smoothie recipe and thickened it up with nonfat Greek yogurt and a little less almond milk than I usually do. Then I loaded it up with all of my favorite toppings – bananas, chia seeds, and my new favorite toasted coconut granola!

I seriously could not be more in love with these smoothie bowls. They’re an incredibly delicious, super healthy, texture and flavor-filled breakfast that takes boring old smoothies to the next level! I know you’ll love them too.

Ingredients
  1. 1 banana, halved and frozen
  2. ½ cup frozen mango chunks
  3. ½ cup unsweetened vanilla almond milk
  4. ½ cup nonfat Greek yogurt (use your favorite flavor – I use plain)
  5. Big handful of baby kale
  6. 1-2 tsp. honey, optional, to taste
For the toppings
  1. Sliced bananas
  2. Chia seeds
  3. Toasted coconut granola (or use your favorite kind!)
Instructions
  1. In a blender, combine all the smoothie ingredients and blend until smooth. Taste and add some honey if you’d prefer a sweeter smoothie. Pour the smoothie into a bowl and top with desired toppings – I use sliced bananas, chia seeds, and granola. Enjoy immediately!
Notes
  1. Frozen bananas are critical for a creamy smoothie! Make sure to freeze yours at least a day in advance 🙂
