Speculoos Truffles

Over the past few years, holiday truffles have become quite a tradition in my family. It’s not Christmas without a batch of truffles chilling in the fridge while I rig up some double-boilers in the kitchen. They’re something I never really consider making any other time of the year, which is the making of the best festive holiday treats.

I love making truffles because they’re pretty, decadent, and (shh!!) actually pretty easy – the perfect combo for holiday gifting and partying. They’re especially perfect for this time of year because not only do they make the most adorable, impressive, delicious Christmas gifts for family and friends, but they are also the perfect fancy bite-sized dessert for your New Year’s Eve spread! Nothing goes better with champagne than truffles, people. Let’s not fight the simple facts.

Baked Chai Spice French Toast

Basically all I want to eat this December is warm, cozy breakfasts. Exhibit A riiiiight up there.

Ever since I moved to a place where “winter” means 40 degrees, instead of -40 degrees, my usual winter cravings have not been kicking in. Normally at this time of year, I’m all about big pots of chili, grilled cheese and homemade tomato soup, and gooey, cheesy baked pastas (swoooooooon), but I gotta admit, in California it just doesn’t feel the same. But my desire to wake up on cold, gray weekend mornings and cozy up with a mug of coffee, an incredible, warm, streusel-topped plate of goodness, and some Ina Garten? Still VERY strong.

Honey Almond Goat Cheese Truffles

I made these for you to make for your holiday party, so can we pretend that I didn’t make these super classy honey almond goat cheese truffles when I was home alone and then sit and eat all of them in my pajamas while watching The Food Network?

I vote yes. You’d never know, right? Our little secret.

But seriously. ‘Tis the season for subsisting solely on cookies and truffles and cheese and champagne. Whether you’re wearing a gorgeous sparkly dress and stilettos at a classy holiday party or your stretchy pants and a messy bun on the couch at home, it’s just the right thing to do!
