Dark Chocolate Zucchini Muffins

HI!! I’m back!

After a crazy amazing summer that involved one very special day, I am so happy to be back in the swing of things! Something about Fall just makes me feel so excited to get back to business and get organized, even though I am definitely not a student anymore. I missed this blog and I missed you all!!

I know I am just catching the tail end of summer, but I couldn’t let the season pass by without sharing an awesome zucchini recipe. I am still seeing tons of zucchini at the Oakland farmers market, so I’m hoping you still have it readily available where you are, too. Can we hold off on the pumpkin spice and butternut squash for a little bit longer? I can’t handle it yet!

Blueberry Oat Bran Muffins

Before you say anything – I know. I know “oat bran muffins” is pretty much the least sexy food-name of all time. But hear me out!!

These blueberry oat bran muffins are kinda sorta like the nerdy girl in the 90’s rom-com who turns into a total babe and wins the heart of the most popular guy in school as soon as she gets some contacts and a blowout. Ya dig?

It’s like, oat bran, BO-RING. Bran muffins, MEH. But then! We add big juicy bursts of fresh blueberry deliciousness and….DAYUMMMM. Sexy. Right?

What do you make for your mom for Mother’s Day brunch when your mom is the biggest chocoholic of all time?

Answer: Enormous chocolate-chocolate chunk muffins. Obviously.

I inherited many things from my mama: a big head of curly hair, a love of crossword puzzles, and a healthy appreciation for some serious trashy reality TV. But maybe the biggest thing I got from my mama? Her major chocolate sweet tooth. (Well, my dad has a giant sweet tooth too, so I was kinda done for at birth on that one, but work with me here.) My mom takes a love of chocolate to the extreme – she has no interest in any desserts that DON’T have chocolate. If there’s chocolate anything on the menu, she’s going to be all about it. Which I love, because I know exactly how to make her happy for virtual Mother’s Day brunch!

Whole Wheat Banana Muffins with Dark Chocolate and Toasted Pecans

Whole Wheat Banana Muffins with Dark Chocolate and Toasted Pecans | My Bacon-Wrapped Life

Happy spring, everyone!!!

Just kidding. It’s 25 degrees out today with a snowstorm coming this week. Spring has NOT SPRUNG in Chicago.

I had planned to do a light, fresh, healthy recipe today to celebrate the official start of spring. But then I was like, you know what, screw it, I’m making some super-loaded banana muffins all jacked up with dark chocolate and toasted pecans. Because in this cruel hell in which it’s still sub-freezing and snowing in late March, bathing suit season just seems really, really far away. And banana muffins sound really, really good right now.
