Guys, it’s been too long since we REALLY did it up with bacon.
I mean, sure, we’ve had some bacon. We’ve eaten lots of ham. Bacon consumption is surely not down in my life in general. But it’s been way too long since we really went whole hog (pun 100% intended) and made a whole meal dedicated to highlighting our beloved bacon.
Important question: are you a sweet or savory breakfast person?
I’m not talking about brunch, where sweet AND savory is obviously the correct (and only acceptable) answer to this question. Examples here, here, and here.
I’m talking about everyday, quick-and-easy, needs-to-fill me-up-til-lunch BREAKFAST.
You know what’s better than pancakes with a side of bacon?
Yeah, that would be pancakes with bacon INSIDE of them.
Whelp. That happened. Can I get a #YOLO? Is that still a thing that people say? If it is, I think bacon pancakes qualify as YOLO-worthy material.
(I swear I’m 25, not 75, as that prior paragraph might lead you to believe. I really don’t know what to say re: my massive uncool-ness. I’m sorry?)
Okay, so this is basically the most ridiculous thing I’ve ever made in my entire life.
And I am not sorry about it one little teeny tiny bit.
It’s already two weeks into January, which means we have SUFFICIENTLY repented for the indulgences of December. It’s totally time for some peanut butter banana bread topped with a peanut butter glaze and brown sugar-candied bacon. Right? Work with me, people.
